Pizza Dough

Ingredients:

yeast
sugar
unbleached wheat flour
salt

 

Put a tablespoon of active dry yeast granules into a half a cup of warm water into which you have stirred a teaspoon of sugar. Allow to stand until the yeasts begin to replicate and are getting foamy.
Put two cups of unbleached hard wheat flour into a large mixing bowl. Add a quarter teaspoon of salt. Add the yeast mixture, and mix with a wooden spoon or your fingers until the paste comes away from the sides of the bowl.
Turn the mass out onto a floured surface and knead for forty turns; fold the dough in half and push down with the heel of your hand, turn ninety degrees and repeat. The texture of the mass will eventually change and become more smooth and elastic.
Put the dough into an oiled bowl, cover with a dampened towel, and let rise in a warm part of the kitchen away from draughts until almost doubled in bulk.
The dough is ready to punch down and roll out.
