Prepared Mustard |

Ingredients: mustard seed |
Grind a quarter cup of yellow mustard seed as fine as flour in
your mortar or blender. Add a half tablespoon of sea salt. Add
two tablespoons of white wine vinegar. Mix well. |

You can vary the recipe a great deal by using different vinegars. Mustard seeds themselves come in several colours and qualities; the dark brown sort are said to be the most pungent. |
