Prepared Mustard

Ingredients:

mustard seed
sea salt
white wine vinegar

Grind a quarter cup of yellow mustard seed as fine as flour in your mortar or blender. Add a half tablespoon of sea salt. Add two tablespoons of white wine vinegar. Mix well.
Now add some water, a little at a time, whisking it in well each time, to thin the mixture down until it will just drip from the whip.
Fill a small jar with the result, cover it tightly and let stand refrigerated until the next day.

Notes:

You can vary the recipe a great deal by using different vinegars. Mustard seeds themselves come in several colours and qualities; the dark brown sort are said to be the most pungent.
