Baked Plantain Slices

Ingredients:

tamarind
sesame oil
salt
plantains

Soak a piece of tamarind pulp the size of a cherry in two tablespoons of water for an hour. Strain, and discard the solids. Add half a teaspoon of sesame oil and a quarter teaspoon of salt. Mix vigorously.
Peel two semi-ripened* plantains and cut them across into thin slices. Using a pastry brush, coat the slices with the tamarind mix and lay out in a single layer on an oiled cookie sheet.
Bake in a medium oven for half an hour.
Let them cool and air for an hour before serving.

 

Notes:

*Plantains in this state have skins about half yellow and half black. If more yellow is showing, the plantain is starchier; if blacker, the fruit will be more sweet. We recommend that you try all the stages to find your preference.
