Baked Plantain Slices |

Ingredients:tamarind |
Soak a piece of tamarind pulp the size of a cherry in two tablespoons
of water for an hour. Strain, and discard the solids. Add half a teaspoon
of sesame oil and a quarter teaspoon of salt. Mix vigorously. |

Notes: |
*Plantains in this state have skins about half yellow and half black. If more yellow is showing, the plantain is starchier; if blacker, the fruit will be more sweet. We recommend that you try all the stages to find your preference. |
