Souped Up

Ingredients:

Chick pea cooking liquid
kohlrabi
snow peas
Salt
Malt vinegar
olive oil

Take the liquid left over from the preparation of Roasted Céci (Garbanzos) and add water to make a total volume of two and a half cups.

Add a quarter cup of white wine and a quarter teaspoon of ground coriander seed. Bring to the boil, reduce the heat, and simmer for two minutes.

Pare a kohlrabi* the size of your closed hand or smaller. Cut it into dice and add to the soup. Adjust the seasoning with a little sea salt, and simmer until the kohlrabi is almost tender.

Add a small handful of snow peas, cut in half. Simmer for two minutes.

Finish with a few drops of lemon juice.

Serve with toasted croûtes and chopped parsley sprinkled on top.

 

Notes:

*If you don't like kohlrabi use a zuchinni or courgette.
